A rice cooker is a kitchen appliance used daily by every household, but even something as common as cooking rice involves a lot of science. Some rice cookers produce grains that are plump and chewy, while others produce a layer of burnt crust at the bottom. The difference lies in three core technologies: heating method, inner pot material, and程序和 pressure control. Pressurized IH heating: On the basis of IH heating, a pressurization device is added, allowing the cooking environment temperature inside the pot to exceed 100°C—usually reaching 105-118°C, and high-end models up to 120°C. Higher temperatures can fully gelatinize the starch, making the rice grains fuller and the texture more glutinous. Another advantage of pressure cooking is that it can shorten the cooking time while allowing the rice flavor to be fully released. The price is generally over 2,000 yuan. The Panasonic SR-SPZ103 and the Tiger JKW-A10W both use pressurized IH technology.
Budget under 300 yuan: choose bottom heating—affordable and still functional, suitable for students or rental apartments.
Budget 300-800 yuan: choose ordinary IH heating—best value, significantly better rice quality.
Budget 800-2,000 yuan: choose IH heating + multi-stage temperature control or variable pressure IH.
Budget over 2,000 yuan: choose pressurized IH heating—the ceiling of rice cookers, a completely different taste.
My recommendation: if you can afford at least 500 yuan, go directly for IH heating. The improvement in rice quality is immediately noticeable.
The inner pot is the direct container for cooking rice, and the material and craftsmanship directly affect the heating efficiency and rice quality.
Aluminum inner pot: Used in low-end rice cookers, lightweight, with relatively poor heat storage and uneven heating. The surface coating can easily scratch and peel off over time. Not recommended.
Stainless steel inner pot: Strong and durable, no coating to peel off, safe and healthy. But the downside is poor thermal conductivity—the bottom heats up quickly but doesn’t distribute heat evenly, and the rice can easily scorch. Some middle-to-high-end rice cookers use a 5-layer composite structure (stainless steel + aluminum + stainless steel) to solve this problem. The Tiger JKW-A10W uses a stainless steel inner pot.
Multilayer composite inner pot: Currently the mainstream choice for mid-to-high-end rice cookers, combining the thermal conductivity of aluminum with the durability of stainless steel, typically in 5-6 layers. The Midea MB-FB40P503 (an IH rice cooker for about 500 yuan) uses an 8-layer composite inner pot suitable for IH heating.
Iron kettle (iron inner pot): The material chosen by some high-end rice cookers, with excellent heat storage and the iron element can also provide a trace amount of iron supplement. The inner pot is very heavy (weighing 3-4 jin), and the heat cycling is excellent during cooking, making the rice more fragrant. However, iron kettles require proper maintenance—they can rust if wiped dry after use and stored in a ventilated place. The Panasonic SR-SPZ103 uses an iron kettle design.
Copper kettle (copper inner pot): Copper has better thermal conductivity than aluminum and iron, heating fast and evenly. But copper kettles are expensive and require plating to prevent copper oxidation, so the cost is higher.
